How to make it

  • The night before cut and flour the Gumdrops with 1/2 cup of the flour and allow to set overnight making sure they are well separated
  • Pre-heat oven 325-350*
  • Tube pan lined with greased paper
  • cream butter , Cream cheese, and sugar
  • Add Eggs one at a time beating well after each
  • Add Vanilla
  • Combine Flour, Baking powder and Lemon Rind.
  • Add to creamed mixture alternately with pineapple starting with flour and ending with flour beating well after each addition
  • Add Gum drops last
  • Pour into prepared pan and bake at 325-350* 1 1/2 hours. If browning too quickly cover with foil.
  • Could not really gage how many servings.

    looking at comments I don't know what happened to amounts not showing...Sugar amounts etc are there also pineapple is showing its 1 cup and undrained as that is the liquid...The cake itself when done has consistency of a pound cake...

    I went ahead and took a guess at the sugar and pineapple. I used 3/4 cup sugar and drained the pineapple. The cake turned out well, though my family thought that there was too much pineapple. It had the consistency of pineapple upside down cake, but with gumdrops. Tasty, but a little heavier than I was expecting. Next time I might try applesauce instead of pineapple. Good luck.

    Gotta try it, this sounds yummy! My Mom used to make gumdrop cookies but never heard of gumdrop cake...bet she would have loved it too!
