Garlicky Green Beans

- 3 to 4 cups fresh, whole green beans shopping list
- 1 medium red onion, sliced thin in rings shopping list
- juice of one lemon shopping list
- 4 Tablespoons extra virgin olive oil shopping list
- 1 large pod of garlic, mashed or pressed (extra if you want more!) shopping list
- 1/2 tsp. dried oregano shopping list
- salt and pepper to taste shopping list
How to make it
- Steam or saute green beans in a shallow pan with a bit of water (covered) for 10 minutes (or until slightly crispy, not overdone, but not too crispy). Remove from stove; drain and put in mixing bowl with onion rings and garlic. Mix well. When cool, add the rest of the ingredients and allow to cool in fridge for at least 2 hours. Serve cold with your favorite dish.
