Ingredients
  • 6 large eggs
  • or
  • 3 cartons (4 oz) cholesterol free egg product, well eaten
  • 1 can (12 ounces) evaporated milk (or fat free evaporated)
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 pkg (30 ounces) frozen shredded hash brown potatoes
  • 2 Cups (8 ounces) shredded Cheddar cheese
  • 1 medium onion, chopped
  • 1 small green bell pepper, chopped
  • 1 C diced ham (optional)

Directions
  1. Preheat oven to 350
  2. Grease a 9 x 13 baking dish
  3. Combine egg, evaporated milk, salt and pepper in a large bowl
  4. Add potatoes, cheese, onion, bell pepper and ham; mix well
  5. Pour mixture into the prepared baking dish
  6. Bake for 60 to 65 minutes or until set
  7. Note: Crumbled cooked bacon or sausage may be used to replace the ham
