Hash Brown Casserole with NO Soup

- 6 large eggs shopping list
- or shopping list
- 3 cartons (4 oz) cholesterol free egg product, well eaten shopping list
- 1 can (12 ounces) evaporated milk (or fat free evaporated) shopping list
- 1 tsp salt shopping list
- 1/2 tsp ground black pepper shopping list
- 1 pkg (30 ounces) frozen shredded hash brown potatoes shopping list
- 2 Cups (8 ounces) shredded cheddar cheese shopping list
- 1 medium onion, chopped shopping list
- 1 small green bell pepper, chopped shopping list
- 1 C diced ham (optional) shopping list
How to make it
- Preheat oven to 350
- Grease a 9 x 13 baking dish
- Combine egg, evaporated milk, salt and pepper in a large bowl
- Add potatoes, cheese, onion, bell pepper and ham; mix well
- Pour mixture into the prepared baking dish
- Bake for 60 to 65 minutes or until set
- Note: Crumbled cooked bacon or sausage may be used to replace the ham
