Marscapone Cream

- 4 oz. amaretti cookies, crushed shopping list
- 4 Tbl Amaretto or maraschino juice shopping list
- 4 eggs, separated shopping list
- generous 1/4 C sugar shopping list
- 1 C marscapone cheese shopping list
- toasted slivered almonds for garnish shopping list
How to make it
- Place amaretti crumbs in a bowl, add the amaraetto or maraschino and set aside to soak
- Meanwhile, beat the egg yolks with the sugar until pale and thick
- Fold in the soaked cookie crumbs
- Whisk the egg whites in a spotlessly clean, bowl until stiff, then gently fold in the cheese mixture
- Divide the marscapone cream between 4 serving dishes and chill for 1 to 2 hours
- Sprinkle with toasted slivered almonds just before serving
