How to make it

  • Slice ends off the cucumber and rub against the ends to get the bitterness out (a white frothy paste will form). Peel cucumbers and slice in about 1/8 inch slices.
  • Add finely chopped garlic and green onions.
  • Add approximately 1/8 cup soy sauce, 1/4 cup white vinegar with 1 tablespoon sesame oil. Add 1/2 tablespoon chili powder (more for taste, I use almost 1 tablespoon).
  • Marinate and chill for at least an hour (more is better).
  • Serve!

    Yummy!!! i added in a couple tsp of sugar to balance the sour and saltiness --- so good. I love kimchi and this recipe is similar, but without the hassle of fermenting and prepping cabbage, etc. :) thanks!

    Different types of chillies used, the taste is different. I have never tried "regular" chili powder with this. Sorry I can't help more with your question.

    Can you tell me the difference between Mexican and Korean Chili Powder. I am sure that there is. I am just curious.
