Hot Cucumbers

- 3 cucumbers shopping list
- 5 chopped green onions shopping list
- 4 large cloves of garlic shopping list
- 1 tablespoon sesame oil shopping list
- 1/8 cup soy sauce shopping list
- 1/4 cup white vinegar shopping list
- 1/2 tablespoon Korean chili powder (Mexican won't do, get it from Asian food shop!). shopping list
How to make it
- Slice ends off the cucumber and rub against the ends to get the bitterness out (a white frothy paste will form). Peel cucumbers and slice in about 1/8 inch slices.
- Add finely chopped garlic and green onions.
- Add approximately 1/8 cup soy sauce, 1/4 cup white vinegar with 1 tablespoon sesame oil. Add 1/2 tablespoon chili powder (more for taste, I use almost 1 tablespoon).
- Marinate and chill for at least an hour (more is better).
- Serve!

Yummy!!! i added in a couple tsp of sugar to balance the sour and saltiness --- so good. I love kimchi and this recipe is similar, but without the hassle of fermenting and prepping cabbage, etc. :) thanks!
