I love this recipe for a bunch of reasons. First, they are unbelievably chewy. Secondly, they are so easy to make. You probably have the ingredients in your kitchen at this moment. Thirdly, they’re freakin’ delicious.

  • 1 stick (4 oz) of butter, melted
  • 1 cup sugar
  • scant 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 egg
  • 1 1/2 flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Extra sugar for sprinkling
  • parchment or wax paper

Directions
  1. Preheat oven to 350 degrees. Line baking sheets with paper and set aside. (Do NOT skip this step! Ever tried scraping bubblegum off hot pavement? Yeah. You’ll be doing that with these cookies.)
  2. 1. Mix the first four ingredients in a bowl. Mix until combined.
  3. 2. Add the egg, and mix until smooth.
  4. 3. Add the dry ingredients, and mix. This won’t look like cookie dough, it looks more like a think batter.
  5. 4. Drop with teaspoons onto the lined baking sheets. Bake for 11 - 13 minutes, or until the edges turn golden brown. Take them out and sprinkle with sugar while they’re still hot and let cool on the sheets until they are cool enough to handle. Peel them off the paper and move to racks to cool completely.
