Ingredients
  • Fabulous Eggs Benedict
  • 4 slices (1 oz. each) Good quality and lean ham,
  • cut in half
  • 2 large slices rye bread, toasted and cut in half
  • 2 teaspoons prepared stone-ground mustard
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/2 cup creamy Alfredo or other white pasta sauce
  • 4 eggs
  • Garnish sprig of parsley, optional

Directions
  1. Place two halves of ham on each half-slice of bread.
  2. In small saucepan, stir together mustard, cheese, and sauce.
  3. Cook over low heat, stirring constantly until thoroughly heated.
  4. Set aside and keep warm.
  5. In 12-inch skillet, bring 2 to 3 inches of water to boiling.
  6. Reduce heat to keep water gently simmering.
  7. Break cold eggs, 1 at a time, into custard cup or saucer.
  8. (CAREFUL!)
  9. Holding dish close to water’s surface, slip eggs 1 by 1 into water. Cook until whites are completely set and yolks begin to thicken but are not hard, about 3 to 5 minutes.
  10. With slotted spoon, lift out eggs.
  11. Drain in spoon or on paper towels.
  12. Trim any rough edges, if desired.
  13. Place eggs on ham.
  14. Spoon about 2 tablespoons sauce over each egg.
  15. Garnish with parsley if desired.
  16. Serve immediately.
