How to make it

  • Stir together first 3 ingredients in a shallow dish.
  • Combine buttermilk and hot sauce in a bowl.
  • Dredge steaks in flour mixture; dip into buttermilk mixture, and dip again in flour mixture.
  • Heat 1/4 cup oil in a large skillet over medium-high heat.
  • Add steaks, and cook 5 minutes on each side. Remove from skillet. Drain steaks on paper towels.
  • Heat remaining 2 tablespoons oil in skillet; whisk in 2 tablespoons flour, and cook, whisking constantly, 5 minutes or until light golden brown.
  • Gradually whisk in milk; cook, whisking constantly, over medium heat until thickened and bubbly (about 10 minutes).
  • Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Serve over steaks.

Great post...Love the stuff....A tip from my brother, who owns a butcher shop...Get top round steak and ask the butcher to run it through the cuber for you..About half the price of cubed steak and you know what you're getting..Cubed steak could be any cut of beef in the grocery store...:)
