This is the perfect summer time salad. Great for Bbq's/Potlucks or just to have on hand for a light Delicious quick meal. keeps well covered tight for up to 3 days in the refrigerator without the citronette..just add citronette to individual portions... More

Ingredients
- 5 Cups seedless Watermelon cut in to 1 1/2 in. cubes or use a Melon baller to make Melon balls, You can also cut mellon in to 1/2 inch wedges.
- 1 Large Cucumber sliced length wise, seeded then placed cut side down and sliced across to make 1/4 in half moon slices
- 1/2 cup shaved red onion or slice very thin
- 1/4 cup Kalamotta olives ruff chopped
- 3/4 cup crumbled Feta cheese
- 1/2 cup Fresh chiffonade of basil
- 3 Lemons juiced and zested
- 2 Tbsp Honey
- 1/2 cup EVOO
- salt & pepper to taste
Directions
- Add all except for the last 4 ingredients to a large bowl (chill)
- In a small bowl using a whisk mix the last 4 ingredients till well emulsified, adjust salt & pepper to your liking
- pour over chilled salad and toss
- enjoy......
