Ingredients
  • 1/4 cup whole black peppercorns
  • 4 boneless New York strip steaks with fat trimmed
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1/2 cup beef broth
  • 3/4 cup heavy cream
  • 1 bunch watercress stems removed

Directions
  1. Heat oven to 200.
  2. Crush peppercorns a few at a time using mortar and pestle or bottom of heavy saucepan.
  3. Place steaks on crushed pepper and coat both sides.
  4. Cover bottom of skillet with thin layer of oil and heat over medium high heat.
  5. Add steaks and sauté 8 minutes per side then season with salt.
  6. Remove from pan and put on platter to keep warm in oven then discard oil from pan.
  7. Add beef broth and boil over high heat until reduced to about 2 tablespoons.
  8. Add cream and bring to boil over high heat stirring until cream is thick enough to coat spoon.
  9. Add salt then spoon sauce over steak.
