How to make it

  • Heat oven to 200.
  • Crush peppercorns a few at a time using mortar and pestle or bottom of heavy saucepan.
  • Place steaks on crushed pepper and coat both sides.
  • Cover bottom of skillet with thin layer of oil and heat over medium high heat.
  • Add steaks and sauté 8 minutes per side then season with salt.
  • Remove from pan and put on platter to keep warm in oven then discard oil from pan.
  • Add beef broth and boil over high heat until reduced to about 2 tablespoons.
  • Add cream and bring to boil over high heat stirring until cream is thick enough to coat spoon.
  • Add salt then spoon sauce over steak.
