Garbanzo Bean Salad

- 1 can garbanzo beans, canned, drained shopping list
- 1 cup seedless cucumber, cubed shopping list
- 1 cup chopped tomato (grape tomatoes work great) shopping list
- 1/2 cup red onion, chopped shopping list
- Dressing shopping list
- 1 tablespoon olive oil shopping list
- 2 tablespoons red wine vinegar shopping list
- 1 tablespoon caper, drained and chopped shopping list
- 1 tablespoon chopped fresh parsley shopping list
- 1 teaspoon dried oregano shopping list
- salt and pepper, to taste shopping list
- Topping shopping list
- 2 ounces feta cheese, crumbled shopping list
- kalamata olives, drained (optional) shopping list
How to make it
- Drain one can of garbanzo beans.
- Chop all other vegetables and add to beans.
- Mix dressing ingredients together; toss with salad.
- Divide salad onto 4 plates; top each plate with 1/2 oz. crumbled feta to serve.
- If desired, you may also add a few Kalamata olives on top of each plate.
