Lemon Curd Cheesecake

- Crust: shopping list
- 2 cups shortbread crumbs shopping list
- 4 tablespoons butter shopping list
- Filling: shopping list
- 3 (8 oz) pkgs. cream cheese, softened shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1 egg yolk shopping list
- 1/4 cup whipping cream shopping list
- 2 tablespoons flour shopping list
- 1 teaspoon vanilla shopping list
- 1/2 teaspoon lemon extract shopping list
- 1 tablespoon lemon zest shopping list
- Topping: shopping list
- 1 jar prepared lemon curd shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease 9" springform pan.
- Stir together crust ingredients and press into pan.
- Bake for 5-7 minutes.
- Beat cream cheese and sugar until smooth, 2-3 minutes.
- Add remaining ingredients except lemon curd, beat until smooth.
- Pour into pan.
- Wrap bottom of pan with foil.
- Place pan into baking dish and pour hot water into baking dish until half full.
- Bake 1 hour or until set around edges. Center should be slightly jiggly.
- Let cool then refridgerate for a few hours.
- Spread top with lemon curd.
- Enjoy!
