How to make it

  • Preheat oven to 350 degrees.
  • Grease 9" springform pan.
  • Stir together crust ingredients and press into pan.
  • Bake for 5-7 minutes.
  • Beat cream cheese and sugar until smooth, 2-3 minutes.
  • Add remaining ingredients except lemon curd, beat until smooth.
  • Pour into pan.
  • Wrap bottom of pan with foil.
  • Place pan into baking dish and pour hot water into baking dish until half full.
  • Bake 1 hour or until set around edges. Center should be slightly jiggly.
  • Let cool then refridgerate for a few hours.
  • Spread top with lemon curd.
  • Enjoy!
