Ingredients
  • 1 1/2 lbs large shrimp
  • 12 oz linquine pasta
  • 3 slices bacon, chopped
  • 1 lb. sea scallops (larger are more succulent)
  • 3 cloves garlic, finely minced
  • 1/2 cup white wine or lower-sodium chicken broth
  • 1 btl (8 oz) clam juice
  • 1/4 tsp crushed red pepper flakes, optional
  • 2 tsp grated lemon zest
  • 3 Tbls lemon juice
  • 2 Tbls. butter
  • 1 pkg (6 oz) baby spinach

Directions
  1. Cut through the shell at the back of each shrimp with scissors.
  2. Gently peel away shell and loosen the dark vein from the center; pull out with fingers.
  3. Gently pull off tail.
  4. Cook pasta according to the package directions; drain.
  5. Meanwhile, in large nonstick skillet over medium-high heat, cook bacon, stirring occasionally, until crisp, (6-8 min).
  6. Transfer bacon to paper towels; reserve 1 Tbls bacon fat.
  7. Heat remaining bacon fat in same pan over med-high heat.
  8. Add scallops; cook, turning once, until opaque and browned, about (5min) per side; remove.
  9. Add shrimp; cook, turning once, until opaque and browned, (2-3 min) per side; remove.
  10. Add reserved 1 Tbls bacon fat to same pan; heat over med-high heat.
  11. Add garlic; cook, stirring unti gragrant, (1-2 min).
  12. Stire in wine, clam juice and red pepper flakes.
  13. Brink to boil.
  14. Cook unti lreduced by half, (5min).
  15. Stir in lemon zest, juice and butter; heat until butter just melts.
  16. Stir in spinach; cook until slightly wilted, 1 minute.
  17. Stir in pasta, scallops and shrimp; heat through.
  18. Serve sprinkled with bacon.
