How to make it

  • Cut through the shell at the back of each shrimp with scissors.
  • Gently peel away shell and loosen the dark vein from the center; pull out with fingers.
  • Gently pull off tail.
  • Cook pasta according to the package directions; drain.
  • Meanwhile, in large nonstick skillet over medium-high heat, cook bacon, stirring occasionally, until crisp, (6-8 min).
  • Transfer bacon to paper towels; reserve 1 Tbls bacon fat.
  • Heat remaining bacon fat in same pan over med-high heat.
  • Add scallops; cook, turning once, until opaque and browned, about (5min) per side; remove.
  • Add shrimp; cook, turning once, until opaque and browned, (2-3 min) per side; remove.
  • Add reserved 1 Tbls bacon fat to same pan; heat over med-high heat.
  • Add garlic; cook, stirring unti gragrant, (1-2 min).
  • Stire in wine, clam juice and red pepper flakes.
  • Brink to boil.
  • Cook unti lreduced by half, (5min).
  • Stir in lemon zest, juice and butter; heat until butter just melts.
  • Stir in spinach; cook until slightly wilted, 1 minute.
  • Stir in pasta, scallops and shrimp; heat through.
  • Serve sprinkled with bacon.
