Ingredients

How to make it

  • Sprinkle the chicken breasts with salt
  • Melt the butter in a large frying pan or wok over med heat
  • Add the chicken and cook it until golden brown. Approx 3 mins per side
  • When this is achieved, add the tomatoes, leek, garlic, sherry and dill.
  • Stir the mixture with a wooden spoon, making sure to scrape up and stir in any browned bits from the pan
  • Reduce heat, cover and simmer for approx 6 - 8 mins, turning the chicken often.
  • Remove the chicken and place onto plates.
  • Return the sauce to a gentle boil for about 3 - 4 minutes, stirring occasionally.
  • Pour the sauce over chicken
  • Serve with brown rice

    Made this last nigth and it was delicious!! Didn't have brown rice but made white rice instead. Still very good! Thanks! I even took a picture! Haha
