Chicken With Sherry Sauce

- 4 skinless, boneless chicken breasts shopping list
- 2 tomatoes, chopped shopping list
- 1 leek cut in half length wise. Rinsed then chopped coarsely shopping list
- 1/4 cup fresh dill - chopped. If none on hand you can use 1 tsp dried dillweed shopping list
- 2 tsp bottled chopped garlic shopping list
- 1 tbsp butter. Or if you prefer extra virgin olive oil shopping list
- salt to taste. Added slowly shopping list
- 1/2 cup dry sherry. If you like this can be substituted with port, red or white wine, or chicken broth shopping list
How to make it
- Sprinkle the chicken breasts with salt
- Melt the butter in a large frying pan or wok over med heat
- Add the chicken and cook it until golden brown. Approx 3 mins per side
- When this is achieved, add the tomatoes, leek, garlic, sherry and dill.
- Stir the mixture with a wooden spoon, making sure to scrape up and stir in any browned bits from the pan
- Reduce heat, cover and simmer for approx 6 - 8 mins, turning the chicken often.
- Remove the chicken and place onto plates.
- Return the sauce to a gentle boil for about 3 - 4 minutes, stirring occasionally.
- Pour the sauce over chicken
- Serve with brown rice
