How to make it

  • Combine banana, sugar, oil, applesauce and eggs.
  • Sift dry ingredients and fold into banana mixture, then add carrots and nuts.
  • Pour into a greased 9 x 5" loaf pan and bake at 350ยบ for 55 minutes or until done.
  • Cool in pan on rack for 10 minutes, then remove from pan.
  • Cool thoroughly before slicing.
  • NOTES : Also good with coconut or raisins stirred in. I have also used almonds instead of walnuts. Makes 1 loaf.
  • A double batch fills 9 baby loaf pans - bake for 35 to 40 minutes. Makes great Christmas gifts.

    This was a great banana bread. I also did a variation though. I took tips from two other reviewers and put them together. I used 1 finely chopped apple in place of applesauce and then used 1/4 cup of applesauce in place of the oil. I also cut the sugar to 3/4 c and used turbinado sugar. I also always mix the sugar in first with the mashed bananas and let it sit for 15 minutes to help break down the bananas. In addition I do always use whole wheat flour instead of white for muffins and breads (1:1 exchange and it comes out great). Finally, I added a handful of raisins along with a handful (about 1/4 c) of walnuts. So essentially I made ABC bread and it was fabulous!

    I just made a variation of this and it is great!! thanks for the wonderful idea of carrot and apple!!!!! I used 1/4 c. fresh Olive Oil from a local farm, then substituted 1 finely chopped (& peeled) apple instead of applesauce. Add 1/4 tsp baking powder and 1/4 tsp nutmeg to dry mix. Omit the Salt & nuts. Mix the dry goods thoroughly to be sure baking soda/powder well distributed. Add moist ingredients to dry ingredients, mix only until fully moistened. My husband is already on his 3rd slice (and there is no butter or salt in it!) :) :) :)

    We make a lot of breads at our house and I don't remember seeing one including both applesauce and carrots. It sounds wonderful! You may like to try my carrot cake, which includes carrots and pineapple.

    Delicious!!! Made this into 1 1/2 doz. muffins this morning.....I used all applesauce and no oil. They were perfect, very tasty and healthy. I got bananas, homemade applesauce, and carrots into my kids this morning all in one muffin. Thanks for sharing!!
