How to make it

  • Combine Jerk Rub in bowl, whisk to blend
  • Rub 1 tablespoon Jerk Rub over the 4 skinned chicken thighs
  • Let stand about 5 minutes
  • Coat a large nonstick skillet with cooking spray OR lightly oil a skillet
  • Brown chicken over medium-high heat for 2 minutes on each side
  • Add 1/4 cup chicken broth, then reduce heat
  • Cover and simmer for 15 or *more* minutes until chicken is done
  • Remove chicken thighs to serving platter
  • Pour drippings over the thighs
