Flying Saucers Recipe

Ingredients

1 cup cooked mashed potatoes

3 tablespoons butter

dash salt and pepper

2 slices bologna

2 oz. cheddar cheese(cut into 2 long sticks or chunks)

Directions

In skillet, melt 1 tablespoon butter.

cut 3 slits in each bologna slice.

Fry bologna in melted butter, browning on each side.

Mix cooked potatoes with remaining butter and season with salt and pepper.

Place bologna in baking pan,

Scoop 1/2 cup of mashed potatoes on each bologna slice.

Place cheese in middle of mashed potatoes.

Place under broiler for 2 to 3 minutes or until cheese is melted.

Serve.
