Prize Winning Pie Pastry Crust Recipe

this is a recipe for pie crust that I got from my late Mother-in-law... this is what she has written on the top of the recipe.

Ingredients
- 4 cups flour
- 1 TBSP. sugar
- 2 teasp. salt
- 1 3/4 cups vegetable shortening ( M-i-L says she used butter flavored Crisco )
- 2 - 3 TBSP. ice water
- 1 large egg
- 1 TBSP. apple cider vinegar
Directions
- in large bowl... combine flour, sugar and salt
- with pastry blender or 2 knives... cut in shortening until mixture resembles course crumbs
- in small bowl..... whisk water, egg, and vinegar
- sprinkle 1 TBSP. of water mixture at a time over flour mixture
- toss flour with fork and adding more water as needed until pastry holds together
- divide into 4 balls.. wrap in plastic wrap and refrigerate for 1 hour
- take out 1 ball and roll out dough to fit a 9-inch pie plate
- fill with your favorite filling
- roll out a second if needed..
- wrap and freeze the unused pastry balls.. or you can roll out and freeze in a pie plate...

Halving the recipe. Will try out some of my new toys on the dough. Non-stick rolling pin, mat, and even bought a rolling pin sleeve to test on the old rolling pin.

I have used the same recipe for years but use 3 cups flour , 1/4 tsp salt and 1 cup butter or shortening etc.
