Mexican Meatball Sandwiches

Spicy twist on the traditional meatball sub.
Ingredients
- meatballs shopping list
- 1 lb. ground pork shopping list
- 1 lb. ground beef shopping list
- 1/2 tsp. cumin shopping list
- 2 cloves garlic, finely chopped shopping list
- 3 eggs shopping list
- 1/4 cup bread crumbs shopping list
- salt and pepper to taste shopping list
- Chipotle Sauce shopping list
- 6 chipotle chiles in adobo sauce shopping list
- 6 medium tomatoes, roasted and peeled shopping list
- 1 cup chicken broth shopping list
- 2 cloves garlic shopping list
- 1/2 tsp. cumin shopping list
- 1 tbls. oregano shopping list
- 2 tablespoons oil shopping list
- salt and pepper to taste shopping list
- 6 sub rolls shopping list
- Mexican blend cheese shopping list
How to make it
- Meatballs
- Mix pork, beef, cumin, garlic, eggs, bread crumbs, and salt and pepper
- Shape into medium sized meatballs
- Set aside
- Chipotle Sauce
- Process all ingredients except oil in food processor
- Strain through sieve
- Saute puree in oil
- Bring sauce to a boil
- Add meatballs and cook for 20-25 minutes
- Cut open sub rolls
- Add meatballs and sauce
- Top with cheese
- Broil for 3-4 minutes to melt cheese
