Ingredients
  • Meatballs
  • 1 lb. ground pork
  • 1 lb. ground beef
  • 1/2 tsp. cumin
  • 2 cloves garlic, finely chopped
  • 3 eggs
  • 1/4 cup bread crumbs
  • salt and pepper to taste
  • Chipotle Sauce
  • 6 chipotle chiles in adobo sauce
  • 6 medium tomatoes, roasted and peeled
  • 1 cup chicken broth
  • 2 cloves garlic
  • 1/2 tsp. cumin
  • 1 tbls. oregano
  • 2 tablespoons oil
  • Salt and pepper to taste
  • 6 sub rolls
  • Mexican blend cheese

Directions
  1. Meatballs
  2. Mix pork, beef, cumin, garlic, eggs, bread crumbs, and salt and pepper
  3. Shape into medium sized meatballs
  4. Set aside
  5. Chipotle Sauce
  6. Process all ingredients except oil in food processor
  7. Strain through sieve
  8. Saute puree in oil
  9. Bring sauce to a boil
  10. Add meatballs and cook for 20-25 minutes
  11. Cut open sub rolls
  12. Add meatballs and sauce
  13. Top with cheese
  14. Broil for 3-4 minutes to melt cheese
