Chorizo Puffs

- 8 oz. frozen puff pastry sheets shopping list
- 4 oz. chorizo sausage, chopped shopping list
- 1/2 cup coarsely shredded mozzarella (or any mild cheese) shopping list
- 1 egg, beaten shopping list
- paprika to dust shopping list
How to make it
- Roll out the pastry thinly on a flour dusted surface.
- With a 3" cutter, stamp out as many rounds as you can (approx. 16).
- Preheat oven to 450 degrees.
- Put chorizo and cheese in a bowl and toss to combine well.
- Place a a little of the chorizo mixture in the center of a round and fold in half sealing the edges together.
- Repeat for all the rounds and place them on a non-stick baking sheet.
- Brush each pasrty lightly with the beaten egg.
- Dust the tops with paprika, and bake for 12-15 minutes until puffed and golden brown.
- Transfer to a wirwe rack and let cool 5 minutes.
- Serve.
