How to make it

  • Roll out the pastry thinly on a flour dusted surface.
  • With a 3" cutter, stamp out as many rounds as you can (approx. 16).
  • Preheat oven to 450 degrees.
  • Put chorizo and cheese in a bowl and toss to combine well.
  • Place a a little of the chorizo mixture in the center of a round and fold in half sealing the edges together.
  • Repeat for all the rounds and place them on a non-stick baking sheet.
  • Brush each pasrty lightly with the beaten egg.
  • Dust the tops with paprika, and bake for 12-15 minutes until puffed and golden brown.
  • Transfer to a wirwe rack and let cool 5 minutes.
  • Serve.

    now this sounds different, love chrizo, but out here in Sheboygan, it's hard to find, must start looking for it.
