Batter Dipped Sea Scallops Recipe
These are very easy to make and so simple. Brings out the sweet of the scallops.

Ingredients
  • Oil as needed for frying
  • 1 egg , slightly beaten
  • 1/3 cup milk
  • 3 tablespoons all-vegetable shortening
  • 1/2 cup All-Purpose Flour
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 2 pounds scallops
  • Purchased tartar sauce and lemon wedges as an accompaniment

Directions
  1. Heat 2 or 3 inches oil to 365ºF in deep fryer or deep saucepan.
  2. In a medium bowl combine egg, milk and melted shortening.
  3. In another bowl combine flour, sugar and salt.
  4. Add to egg mixture; beat until smooth.
  5. Dip scallops in batter. Drain off excess.
  6. Fry, a few at a time, for 1-1/2 to 3 minutes (depending on size) or until golden brown.
  7. Turn as needed for even browning.
  8. Drain on paper towels.
  9. Serve with tartar sauce and lemon wedges.

Sounds great, but I don't use shortening. Do you know what could be used as a substitute?
