Aubergine Sauce

- 1 eggplant (about 1 1/4lbs), pricked all over with a fork shopping list
- 1 red onion, minced shopping list
- 1 plum tomato, chopped shopping list
- 3 garlic cloves, minced shopping list
- 2 tsp dried oregano shopping list
- 3 tbsp red wine vinegar shopping list
- 2 tbsp water shopping list
- salt and fresh-ground black pepper shopping list
How to make it
- Preheat the oven to 375F.
- Place eggplant on a baking sheet and roast about 50 minutes, turing midway through the baking time. Allow to cool slightly.
- Scoop out the pulp, and mix with the onion, tomato, garlic, oregano, vinegar and water.
- Season to taste and serve.
