How to make it

  • Dice bacon and fry slowly in large pot.
  • Remove, drain on paper towels and set to one side.
  • Sauté onion in bacon drippings.
  • Add potatoes, broth, pepper and thyme.
  • Simmer covered for about 30 minutes or until the potatoes are done.
  • Stir in creamed corn and milk, and whisk to blend.
  • Taste for seasoning.
  • Garnish with bacon and paprika.
