Strawberry Rhubarb Custard Cake Recipe
A friend gave me this recipe, thank you Vicki, and it is so good I just have to post it here. We just started getting local strawberries in our area and everyone I know is making this and enjoying it.

Ingredients
  • 1 pkg. white cake mix
  • 4 cups strawberries (or 3 cups fresh rhubarb) or combination of both
  • 1 cup sugar
  • 2 cups heavy whipping cream (un-whipped)

Directions
  1. Prepare cake mix as directed, pour into a 9x13 baking pan.
  2. Slice fruit and arrange evenly over top of unbaked cake.
  3. Sprinkle one cup sugar evenly over fruit.
  4. Pour two cups cream over all.
  5. Bake at 350 degrees for 55 minutes.
  6. *Sometimes this bakes over, just to be safe I would put some tinfoil underneath when baking.
  7. **This cake is good served cold or warm. Must be refrigerated.
  8. Don't be worried if cake seems very liquid when you take it out of the oven, it thickens up as it cools.
