How to make it

  • Preheat oven to 350°F.
  • Season chicken on both sides with salt and pepper and dredge in flour; set aside.
  • Melt half the butter in a large skillet over medium heat; add onion powder, garlic powder, thyme, lemon pepper. Add chicken to skillet and lightly brown on both sides, about 4 minutes. Place in baking dish.
  • Melt remaining butter in skillet and sauté mushrooms and pearl onions until golden, about 4 minutes; add to baking dish with chicken. Pour white wine into same skillet and deglaze, scraping up any bits. Add to chicken and mushrooms. Bake, covered, for 50 to 60 minutes or until thoroughly cooked*. Sprinkle with parsley. Serve Hot.

    Good one Mamalou. Great light alternative to the much heavier red wine and bacon based classic. I bet some baby potatoes sauteed in a little butter would be a nice side with this (I always have to sneak in more butter!) :-)
