How to make it

  • Spray a saucepan with cooking spray.
  • Add onion, bell pepper and garlic; saute for about 3 minutes.
  • Add chili powder and next 8 ingredients.
  • Bring this to a boil.
  • Stir in half of beans;cover; reduce heat and simmer 10 minutes.
  • Place soup in a food processor or blender and process until smooth.
  • Return to pan and add rest of beans; cook throughly heated.

    I'm a Texan and I love pintos.. Will give this a try for a quick healthy lunch.. Can I put bacon in it?

    This sounds delicious. I especially like the fact you blend part and mix it back in for that wonderful creamy texture. Must give this a try.
