Hot Peppered Pinto Garlic Soup Recipe

Ingredients
  • 1 (16oz) can pinto beans, drained
  • 1 (10 1/2 oz) chicken broth
  • 1/3 cup onion, chopped
  • 1/3 cup bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon hot sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Directions
  1. Spray a saucepan with cooking spray.
  2. Add onion, bell pepper and garlic; saute for about 3 minutes.
  3. Add chili powder and next 8 ingredients.
  4. Bring this to a boil.
  5. Stir in half of beans;cover; reduce heat and simmer 10 minutes.
  6. Place soup in a food processor or blender and process until smooth.
  7. Return to pan and add rest of beans; cook throughly heated.

This sounds delicious. I especially like the fact you blend part and mix it back in for that wonderful creamy texture. Must give this a try.


I'm a Texan and I love pintos.. Will give this a try for a quick healthy lunch.. Can I put bacon in it?
