Peaches Berries and Dumplings

- 1 cup flour shopping list
- 2 tsp plus 3/4 cup sugar shopping list
- 1 1/2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1 large egg separated shopping list
- 1 Tbs butter melted shopping list
- 1 1/4 cup fruity wine or water shopping list
- 1/4 tsp cinnamon shopping list
- 1/2 tsp ginger shopping list
- 1/2 cup buttermilk or as needed shopping list
- 4 cups peeled ripe peaches shopping list
- 1 cup fresh blacberries or blueberries shopping list
- whipped cream for garnish and mint leaves shopping list
How to make it
- Sift flour, baking powder, soda, salt and 2 tsp sugar
- Mix together egg yolk, buttermilk and melted butter
- Combine both mixtures, adding more buttermilk if mixture is dry.
- Beat white to soft peaks and blend into mixture.
- In a dutch over with cover, combine wine, 3/4 cup sugar and spice and bring to a boil
- Add peaches and berries and simmer only 3 minutes.
- Do not overcook.
- Drop on dumpling batter by spoonfuls.
- Cover and simmer 8 to 10 minutes or until dumplings are firm.
- Serve with whipped cream.
- Best served when freshly made or up to one hour
