Ingredients
  • 1 lb beef stew meat
  • 4 cloves garlic, chopped
  • 1 onion, grated
  • 1 t cumin, ground
  • 1 t black pepper, ground
  • 2 small cans tomato sauce (or 1 large)
  • 1 T granule style beef bouillon, or to taste
  • 1 T flour

Directions
  1. Sort through stew meat trimming excess fat, gristle.
  2. Cut into 1" pieces.
  3. In medium size, heavy bottom pot, place enough bacon
  4. drippings or melted lard to cover bottom.
  5. Place stew meat, garlic and onion in pot .
  6. Saute meat until it is lightly browned.
  7. Add water to cover.
  8. Add beef bouillon, cumin, pepper and tomato sauce.
  9. Cover, and simmer on low heat until meat is tender.
  10. Toward end of cooking time (about. 1 hr.) add flour to thicken and continue simmering and stir from time to time, for an additional 10 minutes.
  11. Remove from heat.
  12. Note:
  13. Salsa Cruda, Pico de Gallo are good garnishes. Serve with coarsely chopped lettuce and tomatoes and shredded cheddar cheese.
