How to make it

  • Chop all veggies separate.
  • Saute yellow and green zucchinis and mushroom together in a skillet then set aside.
  • Put chicken pieces in a large pot, stir and cook until moisture from chicken has half way evaporated.
  • Next add all onions, garlic, peppers, zucchinis and mushrooms in pot, stir.
  • Add coconut milk and palm oil.
  • Mix in seasonings to taste.
  • Add cilantro and parsley last.
  • Stir and cover for 10-15 mins and enjoy!
