Ingredients
  • 1 Onion
  • 4 cloves of garlic
  • 1 Green Bell pepper
  • 1 Red peppers
  • 1 Orange peppers
  • 1 Yellow Zucchini
  • 1 Green Zucchini
  • 1 large Tomato or two small
  • ¾ Cilantro
  • ¾ cup Parsley
  • ½ tbs of mixed seasonings (salt, pepper, cumin, etc.)
  • “Old Bay” seasonings works well.
  • 1 tbs Palm Oil
  • 1 can Coconut Milk
  • 2 cups Mushrooms
  • 1 pound Chicken
  • ¾ cup of Minced Peanuts (optional)

Directions
  1. Chop all veggies separate.
  2. Saute yellow and green zucchinis and mushroom together in a skillet then set aside.
  3. Put chicken pieces in a large pot, stir and cook until moisture from chicken has half way evaporated.
  4. Next add all onions, garlic, peppers, zucchinis and mushrooms in pot, stir.
  5. Add coconut milk and palm oil.
  6. Mix in seasonings to taste.
  7. Add cilantro and parsley last.
  8. Stir and cover for 10-15 mins and enjoy!
