Dandhas Brazilian Coconut Milk Chicken Stew

- 1 onion shopping list
- 4 cloves of garlic shopping list
- 1 green bell pepper shopping list
- 1 red peppers shopping list
- 1 orange peppers shopping list
- 1 Yellow zucchini shopping list
- 1 green zucchini shopping list
- 1 large tomato or two small shopping list
- ¾ cilantro shopping list
- ¾ cup parsley shopping list
- ½ tbs of mixed seasonings (salt, pepper, cumin, etc.) shopping list
- “Old Bay” seasonings works well. shopping list
- 1 tbs Palm oil shopping list
- 1 can coconut milk shopping list
- 2 cups mushrooms shopping list
- 1 pound chicken shopping list
- ¾ cup of Minced peanuts (optional) shopping list
How to make it
- Chop all veggies separate.
- Saute yellow and green zucchinis and mushroom together in a skillet then set aside.
- Put chicken pieces in a large pot, stir and cook until moisture from chicken has half way evaporated.
- Next add all onions, garlic, peppers, zucchinis and mushrooms in pot, stir.
- Add coconut milk and palm oil.
- Mix in seasonings to taste.
- Add cilantro and parsley last.
- Stir and cover for 10-15 mins and enjoy!
