Caribbean -sweetcorn - Soup

- 1 - spring onions shopping list
- 1 - sprig of thyme shopping list
- 1 - stick of celery shopping list
- -juice of 1/2 lime shopping list
- 1 - pound of pumpkin shopping list
- 1 1/2 - pint of water shopping list
- 8 - ounces of sweet corn shopping list
- 1 - medium-sized tomato shopping list
- 2 - medium-sized potatoes shopping list
- 1/3 - pint of coconut milk shopping list
- -freshly ground black pepper shopping list
- salt to taste shopping list
How to make it
- In a heavy sauce pan add corn and cover
- with the water then bring it to a boil
- and simmer.........
- Peel the potatoes along with the pumpkin,
- remove the pumpkin seeds and dice both of
- the vegetables.............
- Now chop the celery and the spring onions
- then peel and chop the tomato............
- Add the coconut milk to the pan together
- with the prepared vegetables.............
- Next season with the freshly ground black
- pepper and the thyme, add the lime juice................
- Finally, continue cooking on low heat for
- about 20 to 25 minutes until, vegetables
- are soft...........
- Remove the thyme before serving.
- Serves 4............enjoy!!!! this is delicious................
