Fettuccine With Spinach Pesto Recipe

The lemon juice/zest makes the dish taste so fresh! I serve with fettuccine...sometimes as a side, often as a main course on a busy evening.

Ingredients
  • 12 ounces fettuccine
  • Coarse salt and ground pepper
  • 1 package (10 ounces) frozen chopped spinach, thawed
  • 1/3 cup grated Parmesan cheese, plus more for serving (optional)
  • 2 tablespoons pine nuts, plus more for serving (optional)
  • 1 garlic clove
  • 1 teaspoon grated zest plus 2 tablespoons juice from 1 lemon
  • 1/4 cup olive oil

Directions
  1. Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water; immediately drain pasta, and return to pot.
  2. While pasta is cooking, place spinach, Parmesan, nuts, garlic, and lemon zest and juice in a food processor. Process until a paste forms. With motor running, add oil and 1/4 cup cold water; process until smooth and creamy, about 1 minute. Season with salt and pepper. Add to pasta; toss, adding reserved pasta water a little at a time until sauce is thinned slightly and coats fettuccine (you may not need all the water). Serve, sprinkled with additional Parmesan and nuts, if desired.

I'm so please Mystic is making a hobby out of me lately. I've been on here a little over 2 weeks and she has emailed me and now posted to make sure one and all see that this recipe came from Martha Stewart's site. WRONG it came from my girlfriends and not "MS". I have tried to be polite about this and I've asked Mystic to stay off my site area and leave her comments out of my area.

No one has had a problem with the recipes or pictures just her. I've checked out other sites and they have pictures and recipes that do not have source of where they came from and nor does all of hers. I am here to share recipes and make friends. I'm not here for a Drama.


Mystic while your at it I have 237 name of sites that do not use source and I'll be glad to post them on here for you to turn over to peeta. Your site among them. So as I asked don't worry about my site concern yourself with yours. I already been told all about you and the things you do. So thank you but no thank you on the help. IF anyone has a problem then they will have to go directly to the source I got them from and by the way I have permission to use these. I got it years ago so thank you for your concern it wasn't needed.
