Fig and Goat Cheese Bruschetta

- 1-1/4 cups chopped dried Mission figs shopping list
- 1/3 cup sugar shopping list
- 1/3 cup coarsely chopped orange sections shopping list
- 1 tsp. orange zest shopping list
- 1/3 cup fresh orange juice shopping list
- 1/2 tsp. chopped fresh rosemary shopping list
- 1/4 tsp. freshly ground black pepper shopping list
- 40 (1/2" thick) slices French bread baguette, toasted shopping list
- 1-1/4 cups crumbled goat cheese shopping list
- 5 tsp. finely chopped walnuts shopping list
How to make it
- 3 days before serving make the fig jam and refrigerate, then bring to room temperature just before serving on toast.
- Combine first 7 ingredients in a small saucepan, bring to a boil.
- Cover and reduce heat and simmer 10 minutes until figs are tender.
- Uncover and cook 5 minutes until mixture thickens.
- Remove from heat and cool completely, refrigerate.
- The Day of serving.
- Preheat oven to 350*F
- Toast the bread until light brown on both sides.
- Preheat oven to broil.
- Top each bread slice with 1-1/2 tsp. of fig mixture and 1-1/2 tsp. goat cheese.
- Arrange brushchetta on a baking sheet.
- Sprinkle evenly with chopped walnuts.
- Broil 2 minutes until nuts begin to turn brown.
- Serve warm.
