Ingredients

(All quantities are up to you!)

Leftover BBQ chicken

Crispy fried bacon (crumbly)

Green onions

Yellow bell pepper

Celery

Jicama (a.k.a. yam been root. Tastes llike a cross between a potato and and apple.)

Apples

Almonds

Curry powder

Cayenne pepper

Dill

Nutmeg

Mayonaisse

Rice or basalmic vinegar

Soy sauce (light or dark)

Salt and Pepper

Directions

Chop everything into small chunks.

Chop the almonds into small pieces.

Peel the jicama using a potato peeler or a knife, then chop into small chunks.

Put everything in a mixing bowl.

Mix in the liquids (mayo, vinegar and soy sauce) until you get a consistency you like.

For sandwiches, use a bit more mayonaisse; for salad in the bowl, use less.

Serve on really nice bread or on a bed of lettuce for lunch.
