- Take duck and remove all skin and fat . shopping list
- 6 Cups of rhubarb,chopped shopping list
- 3 teaspoons cinnamon shopping list
- 1-1/2 Cups sugar(or) honey shopping list
How to make it
- Stuff the duck tightly with this mixture.
- Place duck in a deep covered pot.
- Add 1 cup of water.
- Fill the pot with the rhubarb,cinnamon and sugar mixture,making very sure to cover the whole bird at least 1' deep,more would be better.
- Place in oven and roast until well done.
- Watch to see that it does not burn,adding water if need be.
- Make a sauce:2 Tablespoons of butter in a pan melt until it starts to brown.Remove ,add 2 tablespoons flour,mix well. Add 1 cup cold orange juice and1 tablespoon sugar or honey.Cook,stir until thicken,add pinch of salt.
- Salt duck a little and cover with sauce.
