How to make it

  • Stuff the duck tightly with this mixture.
  • Place duck in a deep covered pot.
  • Add 1 cup of water.
  • Fill the pot with the rhubarb,cinnamon and sugar mixture,making very sure to cover the whole bird at least 1' deep,more would be better.
  • Place in oven and roast until well done.
  • Watch to see that it does not burn,adding water if need be.
  • Make a sauce:2 Tablespoons of butter in a pan melt until it starts to brown.Remove ,add 2 tablespoons flour,mix well. Add 1 cup cold orange juice and1 tablespoon sugar or honey.Cook,stir until thicken,add pinch of salt.
  • Salt duck a little and cover with sauce.
