Ingredients
  • Take duck and remove all skin and fat .
  • 6 Cups of Rhubarb,chopped
  • 3 teaspoons Cinnamon
  • 1-1/2 Cups Sugar(or) Honey

Directions
  1. Stuff the duck tightly with this mixture.
  2. Place duck in a deep covered pot.
  3. Add 1 cup of water.
  4. Fill the pot with the rhubarb,cinnamon and sugar mixture,making very sure to cover the whole bird at least 1' deep,more would be better.
  5. Place in oven and roast until well done.
  6. Watch to see that it does not burn,adding water if need be.
  7. Make a sauce:2 Tablespoons of butter in a pan melt until it starts to brown.Remove ,add 2 tablespoons flour,mix well. Add 1 cup cold orange juice and1 tablespoon sugar or honey.Cook,stir until thicken,add pinch of salt.
  8. Salt duck a little and cover with sauce.

My grandmother always used saurkraut, but this sure sounds yumm-ier!!!


This sounds very interesting... I have never used this method of roasting. I love rhubarb and could see how the tartness would fair well with the duck. Is this a wild duck recipe or did it say one way or the other?? High 5 for the uniqueness. Jim
