Jamaican Shrimp

- 4 cups water shopping list
- 1/2 cup chopped scallions shopping list
- 4 crushed garlic cloves shopping list
- 3 thyme sprigs shopping list
- 2-3 whole habanero/scotch bonnet chilis shopping list
- 2 tbsp salt shopping list
- 1/2 tsp pepper shopping list
- 10 whole allspice shopping list
- 1 lb 20/25 shrimp in shells shopping list
How to make it
- Mix all ingredients except shrimp in large pot, bring to a boil and then reduce heat and simmer (covered) for 20 minutes
- Remove pot from heat and stir in shrimp, making sure they're all covered with the liquid. Let the pot cool for about an hour uncovered, then serve with a little of the cooking liquid

Can't wait to try these. I have always brined my shrimp before cooking. I think this method of cooking will be great and you won't end up with flabby overcooked shrimp. I think I'll start with two habanero. Maybe add a sliced lemon too.
