How to make it

  • Melt chocolate together with butter in bain-marie.
  • Mix yolks with port wine.
  • Whip egg whites into a firm foam.
  • Now mix chocolate and yolks into a nice paste.
  • Gently incorporate the egg whites (meringue) on the chocolate paste.
  • Put it on a large bowl or 6 individual tiny bowls and cool it for at least 2 hours before serving.
