Oatmeal Butterscotch Bars

- Bars shopping list
- 11/4c all purpose flour shopping list
- 2c quick cooking oats shopping list
- 1/2tsp baking soda shopping list
- 1/2tsp salt shopping list
- 16Tbs unsalted butter(2sticks),softened,each stick cut into 8 pieces shopping list
- 3/4c butterscotch chips shopping list
- 1c packed dark brown sugar shopping list
- 2tsp vanilla extract shopping list
- 1 lg. egg shopping list
- glaze shopping list
- 2Tbs dark brown sugar shopping list
- 1Tbs water shopping list
- 1/8tsp salt shopping list
- 1/4c butterscotch chips shopping list
How to make it
- For the bars: Adjust oven rack to middle position and heat oven to 350. Line a 9x13 baking dish with aluminum foil,leaving overhang on all sides
- Mix flour,oats,bakig soda and salt in med. bowl until combined. Heat butter in small saucepan over med-low heat till nutty brown in color,about 12 mins. Pour hot butter over butterscotch chips in large bowl and whisk until smooth. Whisk in brown sugar until dissolved,then whisk in vanilla and egg until combined. Stir in flour mixture in two additions till combined.
- Spread mixture into prepared pan and bake until edges are golden brown and toothpick inserted in center comes out with a few crumbs attached,17 to 19 mins. Transfer pan to wire rack.
- For the glaze: Bring brown sugar ,water,and salt to a simmer in small saucepan. Pour hot sugar mixture over butterscotch chips in small bowl,whisking till smooth. Drizzle glaze over warm bars and cool on rack until warm to touch,about 11/2 hours
- Using foil overhang,lift bars from pan and cool completely on rack,about 30 mins. Cut into bars and serve.(Bars will keep in airtight container at room tem for up to 3 days)
