Grill Finished Fingerling Potatoes Recipe

Fingerling potatoes are boiled to tenderness then added to the grill to give them a nice crispy finish.

Ingredients
  • 2lb fingerling potatoes
  • 1 stick butter, melted
  • 1/4 cup kosher, rock or sea salt
  • 1T salt blend(I used my own sage/lemon/pepper blend--see recipe on my page)of your choice, but please make it sea or kosher salt based, it does make a difference

Directions
  1. Place potatoes in large saucepan and fill with water to just cover. Add 1/4 cup salt.
  2. Boil about 10 minutes, until just fork tender(or just under, do not overcook)
  3. Drain
  4. In large zipper bag or bowl, combine butter and seasoned salt. Add potatoes and toss to coat.
  5. Grill over medium heat for 15-20 minutes until tender and skin should be somewhat crispy.
  6. **these are great as is, or also good served with sour cream mixed with chives to dip them in**

I always bake mine with olive oil and kosher salt; will have to try to way next time. Sounds great!!!!
