MEXICAN MACARONI AND CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sullivan Estate in Terrell, Texas in 1981.

Ingredients
  • 1 pound wagon wheel pasta cooked al dente
  • 2 cans nacho cheddar soup
  • 2 cans diced green chilies with juice
  • 1 pound lean ground beef browned and well drained
  • 2 medium white onion sliced into 1" wedges and cooked until transparent

Directions
  1. Spray a large casserole dish with cooking spray.
  2. Mix all ingredients in casserole dish adding milk to thin soup as necessary.
  3. Cook covered for 50 minutes then serve immediately.
