Japanese Soba Noodles In Shitake Broth Recipe

Ingredients
  • Dried Shitake mushrooms
  • 2 cups warm water
  • 1 TBSP soy sauce
  • 1 TBSP rice vinegar
  • 1 TBSP sugar
  • 1 TBSP dashi powder
  • 1 TSP mirin
  • soba noodles
  • 4 green onions chopped
  • toasted sesame seeds
  • sliced nori (seaweed) - optional

Directions
  1. Soak mushrooms in warm water for about 20 minutes.
  2. Remove mushrooms and reserve liquid.
  3. Cut off stems and slice mushrooms.
  4. Strain liquid and heat in a medium sized sauce pan with mushrooms and next 5 ingredients.
  5. Cook soba noodles in salted water until al dente - about 8 minutes (maybe less).
  6. Divide broth into two large bowls.
  7. Add cooked soba noodles to each bowl.
  8. Top with green onions, sesame seeds and seaweed if you are using this.
  9. Enjoy!
  10. *you can also add other cooked veggies like bok choy or matchstick carrots, etc.
