Jalapeno Jack Corn Muffuns

- 1 cup yellow corn meal shopping list
- 1 cup all-purpose flour shopping list
- 2 ts baking powder shopping list
- 1/2 ts baking soda shopping list
- 2 tbsp sugar shopping list
- 1 ts salt shopping list
- 1 cup butter milk or whole milk w/ ts vinegar shopping list
- 2 eggs lightly beaten shopping list
- 1/4 cup melted unsalted butter shopping list
- 1 cup jack cheese shredded shopping list
- 2 jalapeno peppers deviened and seeded and finely diced shopping list
- 1 jalapeno pepper, deviened, seeded and cut into 12 slices shopping list
How to make it
- Preheat oven to 400 degrees "F"
- Put a couple of drops olive oil on a papper towel and lightly coat muffin tin.
- In a large bowl combine cornmeal, flour, baking soda, baking powder, and salt and wisk together.
- In another bowl mix together, butter milk, eggs, butter, cheese and diced jalapeno peppers.
- Add wet ingredients to dry and stir batter until all ingredients are well incorperated.
- Pour batter into muffin tin 2/3 way full per
- Place a jalapeno slice on top of each muffin and bake until golden, About 25 to 30 minutes
