This is the way my Aunt made it. She said she got this recipe from a Chinese cookbook, but it's really like no egg foo young that I've ever had. I like this version much better.

There is a place that makes this dish really well-actually two of them-in Southern CA here.
I want to try my hand at making the dish for a variety of good reasons: it uses cheap ingredients, it is good for you, I like it, and it is GOOD!
So, I will take your family recipe and thank your aunt when I take a bite of it!
