Summer Fruit Salad With Port And Mint Dressing Recipe

I came up with this recipe combining the fruits I had at home and garden!

Ingredients
  • 1 avocado
  • 1 pinapple
  • 1 mango
  • 2 cups sliced strawberries
  • 2 bananas
  • 4 plums
  • 2 cups Port Wine
  • 4 tbsp sugar
  • 1 pinch cardamom
  • 1 pinch cinnamon
  • 1 whole jamaica pepper
  • 6 fresh mint leaves

Directions
  1. Prepare the dressing in advance so it has time to cool off.
  2. Put the Port, sugar, spices and mint leaves into a pan and let it cook for 10 minutes, until the sugar dissapears. Get ride of the jamaica pepper and mint leaves and reserve the dressing aside.
  3. Prepare the fruits and cut it into bite pieces.
  4. Mix the fruits together into a large serving bowl, pour over the dressing and give it a gently stir.
  5. Put the salad in the frigde until you serve it.
  6. To a stronger dressing flavour you can add the mint leaves and pepper to the Port the day before you prepare this salad.
