The original recipe made popular at Benedict's Restaurant at the turn of the century in Louisville. If you like cucumbers (and my wife REALLY likes them) then this is the recipe for you.

Ingredients
  • 1 large cucumber
  • 8 ounces cream cheese, softened
  • 2 tablespoons onion, grated
  • 1/4 teaspoon salt
  • 1 dash green food coloring, optional

Directions
  1. Grate and drain cucumber. Combine with remaining ingredients in a food processor.

I love this spread. It makes great tea sandwiches and it is a staple on every babyshower or bridal shower table. I'd forgotton how delicious a sandwich this could be. I need to make some soon. (Just for my lunch box)
