Tilgidhs Banana Cream Recipe

I did not know what to call it that would set it apart. So I named it after him. I hope he approves. It is good on Date Nut Bread, Carrot Cake or all by itself.... Ingredients

4 ripe bananas Brown spotted soft is best

1/2 cup cream cheese

2 tbsp heavy cream

3 tbsp maple syrup

5 tbsp currant jam

3 tbsp chopped almonds

Directions

Mash bananas in a bowl until smooth.

Work in cream cheese and cream until this mixture is thick and fluffy

Mix in maple syrup

Note: You can mix this in a stand mixer or with a hand mixer. I do.

How you finish this off is up to you.

Option 1

Put mixture on a dish and smooth the surface.

Cover with jam and sprinkle with almonds.

Chill for several hours and serve cold.

Option 2

On a serving platter make 2 inch round dollops and flatten.

Cover tops with jam and sprinkle with almonds.

Chill for several hours and serve cold

Option 3

Same as above mentioned but spread on cake as icing, chill. Spread jam on top, then sprinkle almonds.
