I made this on my own because I was tired of buying lemon-pepper chicken that was neither lemony nor peppery enough for me. The result was a dinner flown blown with taste and bursting of flavor!

Ingredients
  • 4 chicken breast halves, bone-in skin-on (using skin-on really adds a crunch)
  • 3 lemons
  • Tons of black pepper – I never measured
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1 tsp salt
  • 4 tbsp olive oil

Directions
  1. Preheat the oven to 400
  2. Cover a glass baking dish with aluminum foil and place the chicken breasts on top
  3. Zest all 3 of the lemons into a small bowl, and then add the juice of 2 of the lemons.
  4. I don’t even know how much black pepper I added since I used my grinder, but I know it was a ton, so use however much you think you’d like, add the pepper and all the other ingredients into the bowl.
  5. Mix to combine and pour over all the chicken breasts
  6. Bake for 1 hour
  7. Remove from the oven and drizzle with the lemon juice of the last lemon, and a few more grinds from pepper mill.
