Wedding Soup Recipe
This is our family recipe for Italian wedding soup and is always a great addition to warm meal in the winter.

Ingredients
  • 1/2 lb. sweet Italian sausage
  • 1/2 c. Italian bread crumbs
  • 1 egg
  • 1/4 t. oregano
  • 1/4 t. dry parsley
  • 1 clove minced garlic
  • Dash of salt and pepper
  • 1 t. olive oil
  • 1/3 c. water
  • 2 c. cooked pastini
  • 2 quarts canned chicken broth
  • 1 chicken bouillon cube
  • 1/2 c. frozen spinach thawed, liquid squeezed out or 1 c. fresh spinach leaves, roughly chopped.

Directions
  1. Meatballs:
  2. Mix first 7 ingredients in bowl.
  3. Form into bite-size meatballs.
  4. Saute in olive oil over medium heat, until lightly browned.
  5. Add water.
  6. Reduce heat, cover and simmer for 3 minutes.
  7. Drain.
  8. Soup:
  9. Place chicken broth, bouillon, cooked pastini, spinach and drained meatballs in large pot.
  10. Bring to a boil.
  11. Reduce heat and simmer 10 minutes.
  12. Serve with crusty Italian bread.
