How to make it

  • Saute onion, celery, and garlic in butter until transparent.
  • Once cooled, mix with ground chuck, pork, bread crumbs, thyme and egg.
  • After it's well mixed, shape into a loaf in a 9 x 13 pan.
  • Bake at 350 degrees for an hour, uncovered.
  • About 10 minutes before it's done, take out and coat top with ketchup, return to oven to finish baking.

    Tried this tonight (actually last night) and it was AWESOME.!! The best meatloaf I think I've ever eaten!! (yummy left overs for work! :-)

    My only deviation from your exact recipe.... I made the coating 1/2 & 1/2 ketchup and honey BBQ sauce.
