Called Christmas eve for its green beans and diced tomatoes, its a hit all year round, great for potlucks, hearty, won't leave you hungry.

Ingredients
- 1 pound stew meat, cubed
- 2-3 potatoes, peeled and cubed
- 2 carrots, cut in bite sized pieces
- 1 small can of cut green beans, undrained
- 1 small can of corn, undrained
- 1 15 ounce can of diced tomatoes in juice, undrained
- 1 small onion, diced
- salt and pepper to taste
Directions
- Cook stew meat in skillet until browned, season to liking.
- Add all ingredients into crock pot.
- Mix well, salt and pepper to taste.
- Cook on high for 4-5 hours or so, checking for doneness in potatoes, 7-8 hours on low setting.
