Called Christmas eve for its green beans and diced tomatoes, its a hit all year round, great for potlucks, hearty, won't leave you hungry.

Ingredients
  • 1 pound stew meat, cubed
  • 2-3 potatoes, peeled and cubed
  • 2 carrots, cut in bite sized pieces
  • 1 small can of cut green beans, undrained
  • 1 small can of corn, undrained
  • 1 15 ounce can of diced tomatoes in juice, undrained
  • 1 small onion, diced
  • salt and pepper to taste

Directions
  1. Cook stew meat in skillet until browned, season to liking.
  2. Add all ingredients into crock pot.
  3. Mix well, salt and pepper to taste.
  4. Cook on high for 4-5 hours or so, checking for doneness in potatoes, 7-8 hours on low setting.
