Loris Italian Pasta Salad Recipe
A delicious pasta salad that is a meal in itself. Make in advance and let the flavors combine. Great for potlucks or picnics.

Ingredients
  • 1 lb. box of bow tie pasta (cooked and drained according to the package)
  • 1 sm. can of sliced black olives drained
  • 1 jar (about 12 oz) of roasted red peppers (drained and sliced into strips
  • 1 jar (about 12 oz) of marinated artichokes (drained and rough chop)
  • 1 pt. of grape or cherry tomatoes rinsed and halved
  • 1 sm. container of boccacini mozzerella (small mozz. balls) drained from their liquid
  • 1/4 lb. Genoa salami cut into small strips
  • 1/4 lb. chunk of provolone cheese cut into small chunks (or more if desired)
  • 1/2 (8 oz) bottle of balsamic vinegrette
  • 1/2 (8 oz) bottle of House Italian dressing ( I like Newmans)
  • fresh basil

Directions
  1. Toss pasta with all in gredients except the fresh basil. Use more or less dressing to taste.
  2. I usually make this salad the day before serving and add more dressing as needed as the pasta absorbs some dressing overnight.
  3. Add chopped fresh basil before serving.
  4. Enjoy!
